Ingredients

9 oz refrigerated tortellini (cheese or your choice)

1 cup heavy cream

1/2 cup sun-dried tomatoes, chopped

2 cups fresh spinach

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped, for garnish


Instructions

1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions. Drain and set aside.

2. In a large skillet over medium heat, add a splash of olive oil and sauté the minced garlic for about 1 minute until fragrant.

3. Pour in the heavy cream and reduce heat. Let it simmer for 2 to 3 minutes.

4. Stir in sun-dried tomatoes and Italian seasoning. Continue simmering for another 2 minutes.

5. Add the fresh spinach and cook until wilted, about 2 minutes.

6. Return cooked tortellini to the skillet. Stir gently to coat with sauce.

7. Add Parmesan cheese and stir until melted and the sauce thickens. Season with salt and pepper to taste.

8. Serve warm. Garnish with additional Parmesan and fresh parsley.

Notes

You can add grilled chicken, shrimp, or bacon for extra protein.

Swap spinach for kale or arugula for variety.

Use full-fat coconut milk and nutritional yeast for a dairy-free version.

Reheat leftovers with a splash of milk or cream to loosen the sauce.
