Description
Mini Pineapple Upside-Down Cheesecakes are creamy individual desserts topped with sweet pineapple and finished with caramel sauce.
Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
2 packages cream cheese softened
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 can pineapple chunks drained
1/4 cup caramel sauce
Instructions
1. Preheat oven to 325°F
2. Mix graham cracker crumbs with melted butter
3. Press crust mixture into muffin cups
4. Beat cream cheese until smooth
5. Add sugar and vanilla and mix well
6. Add eggs one at a time and mix gently
7. Place pineapple chunks over the crust
8. Pour cheesecake batter into muffin cups
9. Bake for 20 to 25 minutes
10. Cool completely
11. Refrigerate for at least four hours
12. Drizzle caramel sauce before serving
Notes
Make sure cream cheese is softened
Drain pineapple well
Chill cheesecakes before serving for best texture
