Description
These old fashioned donut muffins bring the flavor of classic cake donuts into a simple, no-fry baked treat. Soft, spiced, and topped with a crackly glaze, they’re the perfect nostalgic bake for any day of the week.
Ingredients
1/4 cup butter, softened
1/4 cup vegetable oil
1/2 cup white sugar
1/3 cup brown sugar
2 eggs
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
2 2/3 cups all-purpose flour
1 cup milk
Glaze:
3 tablespoons melted butter
1 cup powdered sugar
3/4 teaspoon vanilla extract
2 tablespoons hot water
Instructions
1. Preheat oven to 425°F. Prepare a 12-cup muffin tin with liners or grease.
2. Beat butter, oil, and both sugars until smooth.
3. Add eggs one at a time, mixing after each.
4. Stir in baking powder, baking soda, salt, nutmeg, cinnamon, and vanilla.
5. Add flour in three parts, alternating with milk in two parts, mixing gently.
6. Spoon batter into muffin cups, filling each about 3/4 full.
7. Bake for 15–17 minutes until golden and a toothpick comes out clean.
8. Cool for 10 minutes on a wire rack.
9. In a bowl, mix glaze ingredients until smooth.
10. Dip muffin tops in glaze, let rest 5 minutes, then dip again.
11. Let glaze harden and serve.
Notes
Try using buttermilk for a tangy twist.
For variation, add a pinch of ground clove or cardamom.
Freeze unglazed muffins and add glaze fresh when serving.
