Description
Sweet and savory Pineapple Pork Chops simmered in a rich pineapple barbecue glaze, ready in 20 minutes.
Ingredients
6 boneless pork loin chops about 1 inch thick
Salt to taste
Black pepper to taste
1 tablespoon olive oil
1 cup pineapple juice
1/4 cup barbecue sauce
1/4 cup brown sugar
1 teaspoon sea salt
1 teaspoon ground ginger
1 teaspoon garlic powder
1 teaspoon dried minced onions
1 cup pineapple tidbits
Instructions
1. Season pork chops on both sides with salt and pepper.
2. Whisk pineapple juice, barbecue sauce, brown sugar, sea salt, ginger, garlic powder, and dried minced onions until smooth.
3. Heat olive oil in a skillet over medium high heat.
4. Sear pork chops for about 2 minutes per side until golden brown.
5. Remove pork chops and set aside.
6. Pour sauce into skillet and scrape up browned bits.
7. Bring sauce to a boil then reduce heat.
8. Return pork chops to skillet and simmer 8 to 10 minutes until internal temperature reaches 145 degrees Fahrenheit.
9. Stir in pineapple tidbits during the final minute and serve.
Notes
Use a thermometer to avoid overcooking.
Allow pork to rest briefly before serving.
Add red pepper flakes if extra heat is desired.
