Description
Delicious sugar cookies topped with caramelized pineapple rings, combining the flavors of classic pineapple upside down cake in a fun, handheld treat.
Ingredients
1 cup Unsalted Butter, softened
1 cup Granulated Sugar
1 large Egg
1 teaspoon Vanilla Extract
2 cups All-Purpose Flour
1 teaspoon Baking Soda
1/2 teaspoon Salt
10–12 rings Canned Pineapple, well-drained and patted dry
to taste Additional Sugar for Sprinkling
Instructions
1. Preheat your oven to 350°F (180°C). Line baking trays with parchment paper.
2. Cream together the softened butter and sugar until light and fluffy, about 2–3 minutes.
3. Beat in the egg and vanilla extract until smooth.
4. Whisk together flour, baking soda, and salt in a separate bowl.
5. Gradually mix dry ingredients into wet until a soft dough forms.
6. Scoop 2 tablespoons of dough per cookie onto trays, spaced 2 inches apart.
7. Gently press a pineapple ring onto each dough ball, trimming if needed.
8. Sprinkle sugar over the top of the pineapple.
9. Bake for 11–13 minutes until edges are golden and centers are set.
10. Cool on the tray for a few minutes, then transfer to a wire rack to cool fully.
Notes
Store in an airtight container for 3 days or freeze for 2 months.
Trim pineapple rings to fit. Use parchment to prevent sticking.
