Description

This Pioneer Woman Corn Casserole is a Southern holiday favorite, creamy, buttery, and golden brown on top. Made with simple pantry ingredients like corn, sour cream, and cornbread mix, it’s the perfect side dish for any festive table.

Ingredients

Scale

1 (15-ounce) can sweet corn, drained

1 (15-ounce) can cream-style corn

1 cup sour cream

1 cup shredded cheddar cheese

1 stick (1/2 cup) butter, melted

1 package (8.5 ounces) cornbread mix

1/4 cup sugar (optional, to taste)

Instructions

1. Preheat oven to 350°F (175°C).

2. In a large mixing bowl, combine sweet corn, cream-style corn, sour cream, cheese, melted butter, cornbread mix, and sugar. Stir until smooth.

3. Grease a 9×13-inch baking dish with butter or spray.

4. Pour the mixture into the dish and spread evenly.

5. Bake for 45 minutes, or until top is golden brown and set.

6. Let cool for 5 minutes before serving.

Notes

You can substitute frozen corn (thawed and drained) for canned corn.

Try different cheeses like Monterey Jack or Pepper Jack for extra flavor.

Prepare ahead by mixing ingredients and refrigerating up to 24 hours before baking.
