Description

These Roasted Cherry Brownies are packed with rich chocolate flavor and oven-roasted cherries for a perfectly sweet, chewy treat. A simple yet impressive dessert.


Ingredients

2 cups (276 g) sweet cherries, pitted and halved

2 teaspoons granulated sugar

1¼ cups (227.5 g) semisweet chocolate chips, divided

¾ cup (163.5 g) vegetable oil

1 cup (200 g) granulated sugar

⅔ cup (133 g) packed light brown sugar

3 large eggs, room temperature

2 teaspoons vanilla extract

1 cup (125 g) all-purpose flour

1 cup (118 g) Dutch-processed cocoa powder

½ teaspoon kosher salt


Instructions

1. Preheat oven to 400°F. Roast cherries with sugar for 10 minutes and let cool.

2. Lower oven to 350°F. Grease a 9×9-inch baking dish.

3. Melt ½ cup chocolate chips with oil. Set aside.

4. Beat sugars, eggs, and vanilla for 5–6 minutes until thick.

5. Stir in the melted chocolate mixture.

6. Whisk flour, cocoa, and salt in a bowl. Fold into batter.

7. Stir in remaining chocolate chips and half the roasted cherries.

8. Pour batter into pan and bake for 30–35 minutes.

9. Top with remaining cherries while warm.

10. Cool and slice into squares.

Notes

Use frozen cherries if needed, just thaw and dry well. Add chopped nuts or almond extract for variation.
