Description
Rotel Pasta Fiesta is a creamy and spicy Tex-Mex pasta recipe that comes together fast using pantry-friendly ingredients. Perfect for weeknights.
Ingredients
12 oz pasta (penne or rotini)
1 lb ground beef or turkey
1 can (10 oz) Rotel diced tomatoes and green chilies (undrained)
1 cup heavy cream
1 cup shredded cheddar cheese
1 teaspoon taco seasoning
½ teaspoon garlic powder
Salt and pepper, to taste
Fresh cilantro or parsley (optional, for garnish)
Instructions
1. Boil pasta in salted water until al dente. Drain and set aside.
2. Cook ground meat in a skillet until browned. Drain any grease.
3. Add Rotel tomatoes, taco seasoning, garlic powder, salt, and pepper. Simmer 3–5 minutes.
4. Pour in heavy cream and stir. Let it simmer for 5 minutes to thicken.
5. Add pasta and mix until coated.
6. Add cheese and stir until melted and smooth.
7. Garnish with herbs if desired. Serve hot.
Notes
You can substitute the protein or make it vegetarian with beans and veggies.
To make ahead, prep the pasta and meat separately and combine before serving.
