Description

Tender slow cooker Hawaiian pork loin cooked with pineapple and soy sauce for a sweet and savory dinner.


Ingredients

Scale

3 to 4 pound boneless pork loin

1½ teaspoon kosher salt

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon ground ginger

1 tablespoon vegetable oil

20 ounces canned pineapple chunks with juice reserved

½ cup light soy sauce

½ large sweet onion diced

1 tablespoon cornstarch

1½ tablespoons cold water

2 tablespoons chopped scallions


Instructions

1. Combine salt paprika onion powder and ground ginger then rub over pork loin

2. Sear pork loin in hot oil until browned on all sides

3. Whisk soy sauce with reserved pineapple juice

4. Place half the pineapple chunks in slow cooker then add pork

5. Top with remaining pineapple and diced onion

6. Pour soy sauce pineapple mixture over pork

7. Cook on high for about 4 to 5 hours until pork reaches 145°F

8. Remove pork and strain cooking liquid

9. Whisk cornstarch with water then stir into simmering sauce

10. Slice or shred pork and serve with sauce and pineapple

Notes

Adjust salt depending on soy sauce brand

Cook slightly longer if shredded pork is desired
