A cozy spaghetti pie made with layers of savory beef, creamy cheese, and a pasta crust. It’s the perfect meal for family dinners or meal prep.
Ingredients
6 ounces uncooked spaghetti
1 pound lean ground beef (90% lean)
1/2 cup finely chopped onion
1/4 cup chopped green bell pepper
1 cup undrained canned diced tomatoes
1 can (6 ounces) tomato paste
1 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon sugar
2 large egg whites, lightly beaten
1 tablespoon melted butter
1/4 cup grated Parmesan cheese
1 cup 2% cottage cheese
1/2 cup shredded part-skim mozzarella cheese
Instructions
1. Cook spaghetti in boiling water until al dente. Drain and set aside.
2. In a skillet, cook ground beef with onion and green pepper until no longer pink. Drain any excess fat.
3. Stir in tomatoes, tomato paste, oregano, garlic powder, salt, pepper, and sugar. Simmer for 5 minutes.
4. In a large bowl, whisk egg whites with melted butter and Parmesan. Toss with cooked spaghetti.
5. Grease a 9-inch deep-dish pie plate. Press spaghetti mixture into the bottom and sides to form a crust.
6. Spread cottage cheese evenly over the pasta crust.
7. Top with the meat mixture and spread into an even layer.
8. Bake at 350°F for 20 minutes uncovered.
9. Add mozzarella on top and bake 5 to 10 minutes more until cheese is melted.
10. Let rest for 5 minutes before slicing and serving.
Notes
Swap ricotta for cottage cheese or use sausage instead of ground beef if desired. Add sautéed vegetables for variety. Let cool completely before freezing.
