St Paddy’s Mint Cheesecake Cups are a creamy no bake dessert layered with crushed cookies, peppermint cheesecake filling, and chocolate chips.
Ingredients
10+ Oreo cookies, crushed
1 cup heavy cream
8 ounces cream cheese, softened
1 cup powdered sugar
1/2 teaspoon peppermint extract
1/2 teaspoon vanilla extract
2 to 4 drops green food coloring
1 cup mini chocolate chips
Instructions
1. Whip heavy cream until stiff peaks form and refrigerate.
2. Beat softened cream cheese until smooth.
3. Add powdered sugar and mix until creamy.
4. Mix in peppermint extract, vanilla extract, and green food coloring.
5. Fold in whipped cream and mini chocolate chips.
6. Layer crushed cookies and cheesecake mixture into serving glasses.
7. Top with whipped cream and garnish as desired.
8. Refrigerate for at least 2 hours before serving.
