Description
Sticky Sweet Chili Short Ribs are fall-off-the-bone tender, coated in a sweet and spicy glaze made with garlic, rice vinegar, and chili flakes. This oven-baked recipe is easy, flavorful, and guaranteed to impress.
Ingredients
2 racks pork baby back ribs, membrane removed
1 tbsp salt
1 tbsp black pepper
1/2 cup rice vinegar
1/2 cup sugar
1 tbsp minced garlic
1 tsp red chili flakes (adjust to taste)
1 tbsp fish sauce or soy sauce
1 tsp cornstarch mixed with 2 tsp water
Instructions
1. Preheat oven to 275°F (135°C) and line a baking tray with foil.
2. Pat ribs dry and rub evenly with salt and pepper.
3. Place ribs bone-side down on tray, brush with half the glaze, and wrap tightly with foil.
4. Bake for 2.5 to 3 hours until meat is tender and pulling from the bone.
5. While ribs bake, combine vinegar, sugar, garlic, chili flakes, and fish sauce in a saucepan. Simmer for 5 to 7 minutes.
6. Add cornstarch slurry and simmer again until thick and glossy.
7. Remove ribs from foil, brush with more glaze.
8. Broil for 3 to 5 minutes until glaze caramelizes.
9. Let rest 10 minutes before slicing. Garnish as desired.
Notes
You can use beef short ribs or boneless country-style ribs.
Swap fish sauce with soy sauce for a milder glaze.
Add sriracha or Thai chilies for more heat.
Top with sesame seeds or lime zest for garnish.
