Sweet Hawaiian Crock Pot Chicken is tender, sweet savory slow cooker chicken with pineapple glaze, easy, juicy, and perfect for weeknight dinners.
Ingredients
2 lbs boneless skinless chicken breasts or thighs
1 cup pineapple juice
1 can 8 oz pineapple chunks, drained
1/2 cup soy sauce
1/2 cup brown sugar
3 cloves garlic, minced
1 tablespoon cornstarch
2 tablespoons water
1 red bell pepper, thinly sliced
1/2 teaspoon ground ginger
Salt and pepper to taste
Cooked rice for serving
Green onions and sesame seeds for garnish
Instructions
1. Season chicken and place in slow cooker
2. Whisk pineapple juice, soy sauce, brown sugar, garlic, and ginger
3. Pour sauce over chicken and add pineapple and bell pepper
4. Cook on low 5 to 6 hours or high 3 to 4 hours
5. Remove chicken and stir cornstarch slurry into sauce
6. Cook until thickened
7. Return chicken and coat with sauce
8. Serve over rice and garnish
Notes
Use chicken thighs for juicier texture
Allow sauce to simmer uncovered to thicken
Store leftovers up to 4 days in refrigerator
