Zesty honey lime chicken served over herb-infused rice and creamy avocado slices, stacked beautifully for a simple, flavorful dinner.
Ingredients
For the chicken:
1 lb boneless skinless chicken breasts
¼ cup honey
2 tablespoons fresh lime juice
1 teaspoon lime zest
2 garlic cloves, minced
Salt and pepper to taste
Oil for cooking
For the rice:
1 cup cooked white or brown rice
¼ cup chopped fresh cilantro
1 tablespoon lime juice
Salt to taste
For the avocado:
2 ripe avocados, sliced
1 tablespoon lime juice
Salt and pepper to taste
Instructions
1. Season chicken breasts with salt and pepper.
2. Whisk together honey, lime juice, zest, and garlic.
3. Sear chicken in a skillet for 6–7 minutes per side.
4. Brush glaze onto chicken in the last minutes of cooking, let it caramelize. Rest and slice.
5. Mix cooked rice with cilantro, lime juice, and salt.
6. Slice avocados and toss with lime juice, salt, and pepper.
7. Use a ring mold to layer rice, avocado, and chicken.
8. Drizzle extra glaze and serve immediately.
Notes
Use a thermometer for accurate chicken temperature.
Assemble just before serving for best texture.
Brown rice or quinoa makes a great base.
Add chili flakes to the glaze for extra heat.
