Ingredients
2 pounds pork shoulder or pork butt, cut into chunks
1 can pineapple chunks, 20 ounces, drained with juice reserved
1/4 cup soy sauce
1/4 cup brown sugar
3 cloves garlic, minced
1 teaspoon ginger, minced
Salt and pepper to taste
1 tablespoon cornstarch
1 tablespoon water
Chopped green onions for garnish
Instructions
1. Mix pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper in a bowl.
2. Place pork chunks into the slow cooker and pour sauce over them.
3. Cook on low for 6 to 8 hours or on high for 3 to 4 hours until tender.
4. Add pineapple chunks during the final hour.
5. Remove pork and transfer cooking liquid to a saucepan.
6. Stir in cornstarch slurry and cook until thickened.
7. Return pork and pineapple to slow cooker and coat with sauce.
8. Garnish with green onions and serve.
Notes
Use pork shoulder for best tenderness.
Adjust sweetness by reducing brown sugar if desired.
Use low sodium soy sauce to control salt levels.
