Description

Warm, vibrant turmeric chicken soup made from scratch with real ingredients like shredded chicken, lentils, and healing spices. A perfect cozy bowl for any season.


Ingredients

Scale

For the Broth:

lb whole chicken

4 sprigs thyme

1 shallot, quartered

3 ribs celery, chopped

3½ tsp salt

12 cups water

For the Soup:

1 tbsp olive oil

1 yellow onion, diced

3 carrots, sliced

4 ribs celery, diced

4 garlic cloves, minced

8 scallions, chopped (white and green parts separated)

2 tsp ginger, minced

2 tsp turmeric

1½ cups red lentils, rinsed

½ tsp crushed red pepper (optional)

Juice of 1 lemon

Salt and pepper to taste


Instructions

1. In a large pot, place chicken, thyme, shallot, and celery. Add water to cover and salt. Bring to boil, then simmer uncovered for 2 hours.

2. Remove chicken and shred once cooled. Set aside.

3. Strain broth through mesh sieve and discard solids. Clean pot and return to stove.

4. Heat olive oil. Sauté onion, carrots, and celery for 8–10 minutes. Add garlic and scallion whites, cook 1 more minute.

5. Add ginger and turmeric. Stir in lentils and more salt. Cook 1 minute.

6. Pour in strained broth and shredded chicken. Simmer 30 minutes.

7. Add crushed red pepper, lemon juice, and half the scallion greens. Simmer 5 more minutes.

8. Serve hot and garnish with remaining scallion greens.

Notes

Spinach or kale can be added at the end for extra greens.

Green lentils take longer to cook but can be used.

For creaminess, add a swirl of coconut milk or Greek yogurt before serving.
