Ingredients
2 tbsp cottage cheese
½ ripe banana, mashed
1 tbsp coconut flour
1 egg or flax egg
½ tsp vanilla extract
Optional: 1 tsp shredded coconut
Optional: pinch of cinnamon
Optional: 1 tsp maple syrup or honey
Instructions
1. Mash banana in a microwave-safe mug until smooth.
2. Add cottage cheese, egg, and vanilla. Mix well.
3. Stir in coconut flour and any optional ingredients.
4. Microwave on high for 60–90 seconds until the top is set.
5. Let sit for 1 minute before enjoying with your favorite toppings.
Notes
Use almond yogurt instead of cottage cheese for a dairy-free version.
