Description
A light and fluffy pumpkin cottage cheese bake with warm spices, perfect for breakfast or dessert.
Ingredients
1 cup full-fat cottage cheese
1 cup pure pumpkin puree
2 large eggs
1/3 cup maple syrup
2 tbsp almond flour
1½ tsp pumpkin pie spice
1 tsp vanilla extract
1/2 tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C). Lightly grease a small baking dish.
2. Blend cottage cheese, pumpkin puree, eggs, and maple syrup until smooth.
3. Add almond flour, pumpkin pie spice, vanilla, baking powder, and salt. Pulse until combined.
4. Pour batter into the prepared dish.
5. Bake for 30–35 minutes until set.
6. Cool for 15 minutes before serving.

Blending until smooth ensures a fluffy texture.
