Description

Ingredients

4 cups fresh arugula, washed and thoroughly dried

2 large crisp apples, thinly sliced

1/2 cup walnuts, lightly toasted

1/2 cup feta cheese, crumbled

1/4 red onion, thinly sliced

3 tablespoons extra-virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt, to taste

Instructions

1. Wash the arugula and dry it completely with a salad spinner or clean kitchen towel.

2. Thinly slice the apples and red onion.

3. Toast the walnuts in a dry skillet over medium-low heat for 3 to 5 minutes, stirring often, until fragrant.

4. Add the arugula, apple slices, toasted walnuts, feta cheese, and red onion to a large salad bowl.

5. Whisk the olive oil, apple cider vinegar, honey, salt, and black pepper in a small bowl until combined.

6. Pour the dressing over the salad ingredients.

7. Toss the salad gently until the dressing lightly coats all the ingredients.

Notes

Use Honeycrisp or Fuji apples for sweetness, or choose Granny Smith apples for a tart flavor.

Replace the walnuts with pecans, almonds, or pistachios.
