Description

Apple Crumb Cake combines a soft cinnamon cake base, tender apple slices, and a generous buttery crumb topping. This easy homemade dessert is ready in about 45 minutes and works well for brunch, family gatherings, holidays, or an afternoon treat with coffee.

Ingredients

Scale

3/4 cup all purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

3/4 teaspoon ground cinnamon

1/8 teaspoon baking soda

1/8 teaspoon salt

1/4 cup plus 2 tablespoons milk

3/4 teaspoon pure vanilla extract

1/4 cup plus 2 teaspoons vegetable or canola oil

1 large egg

2 to 3 medium apples, peeled, cored, and sliced

2 tablespoons granulated sugar

1/2 teaspoon ground cinnamon

1 tablespoon apple cider vinegar

1/3 cup packed light brown sugar

1/3 cup granulated sugar

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted and cooled

1 1/2 cups all purpose flour

Instructions

1. Preheat the oven to 375°F.

2. Grease and lightly flour an 8 inch springform pan.

3. Whisk the brown sugar, granulated sugar, cinnamon, salt, and flour for the crumb topping in a medium bowl.

4. Add the melted butter and stir with a fork until coarse crumbs form.

5. Set the crumb topping aside.

6. Whisk the flour, granulated sugar, baking powder, cinnamon, baking soda, and salt for the cake in a separate bowl.

7. Combine the milk, vanilla extract, oil, and egg in another bowl or measuring cup.

8. Pour the wet mixture into the dry ingredients.

9. Stir only until combined, leaving a few small lumps if necessary.

10. Spread the batter evenly in the prepared pan.

11. Toss the apple slices with the granulated sugar, cinnamon, and apple cider vinegar.

12. Arrange the coated apples evenly over the cake batter.

13. Cover the apples completely with the prepared crumb topping.

14. Bake for 30 to 35 minutes, or until the topping is golden brown.

15. Let the cake cool completely in the pan.

16. Transfer the cake to a serving plate, slice, and serve.

Notes

Use firm apples such as Honeycrisp, Granny Smith, Fuji, or Golden Delicious.

Measure flour with the spoon and level method to avoid a dense cake.

Do not overmix the batter because gentle mixing helps preserve a tender texture.

Allow the cake to cool before slicing so the crumb layer can set.

Serve with caramel sauce or vanilla ice cream for a richer dessert.

Store covered at room temperature for up to 2 days.

Refrigerate in an airtight container for up to 4 days.

Freeze tightly wrapped slices for up to 3 months.
