Instructions

1. Whisk the flour, brown sugar, baking powder, cinnamon, nutmeg, cloves, and salt together in a medium bowl.

2. Whisk the milk, egg, melted butter, and vanilla extract together in a separate bowl.

3. Pour the wet mixture into the dry ingredients and stir gently until just combined. Leave a few small lumps in the batter.

4. Fold the grated apple into the batter without overmixing.

5. Heat a skillet over medium heat and lightly grease it with butter or vegetable oil.

6. Pour about 1/4 cup of batter onto the skillet for each pancake.

7. Cook for 1 to 2 minutes, or until bubbles form on the surface and the edges begin to set.

8. Flip each pancake and reduce the heat to medium-low.

9. Cook the second side for about 1 minute, or until golden brown and cooked through.

10. Transfer the cooked pancakes to a baking sheet and keep them warm in a 200°F oven while cooking the remaining batter.

11. Warm the maple syrup gently and stir in the vanilla extract.
