Description

Ingredients
Pumpkin Cake
3 large eggs
1 cup granulated sugar
2/3 cup pumpkin puree, not pumpkin pie filling
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
Cream Cheese Filling
8 ounces cream cheese, softened
4 tablespoons salted butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
Instructions
1. Preheat the oven to 375°F. Line a 10×15-inch jelly roll pan with parchment paper and coat it lightly with nonstick cooking spray.
2. Whisk the eggs in a large bowl for about 30 seconds.
3. Add the granulated sugar, pumpkin puree, and vanilla extract. Whisk until smooth.
4. Add the flour, baking powder, pumpkin pie spice, and salt. Mix until the batter looks even and no dry streaks remain.
5. Spread the batter evenly in the prepared pan.
6. Bake for about 15 minutes, or until a toothpick inserted in the center comes out clean.
7. Carefully roll the hot cake with the parchment paper still attached, starting from one short end. Use oven mitts because the pan and cake will be hot.
8. Let the rolled cake cool completely at room temperature.
9. Beat the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
10. Gently unroll the cooled cake and slowly remove the parchment paper.
11. Spread the cream cheese filling evenly over the cake.
12. Roll the cake back into shape, wrap it tightly in plastic wrap, and refrigerate until chilled.
13. Slice and serve.

Roll the cake while it is still warm to help prevent cracking.
Let the cake cool completely before adding the filling.
Use pure pumpkin puree rather than pumpkin pie filling.
For freezing, wrap the roll in two layers of plastic wrap and place it in a freezer-safe bag.
