Ingredients

1 large onion, chopped

2 large sweet potatoes, peeled and diced, about 4 cups

1 28-ounce can diced tomatoes

2 teaspoons chili powder

1 teaspoon dried oregano

1 teaspoon smoked paprika

4 cups low sodium vegetable broth


Instructions

1. Warm the olive oil in a large soup pot over medium heat.

2. Add the chopped onion and cook for about 5 minutes, until softened.

3. Stir in the diced sweet potatoes and minced garlic, then cook for another 3 minutes.

4. Add the black beans, diced tomatoes, sea salt, dried sage, chili powder, oregano, and smoked paprika. Stir well.

5. Pour in the vegetable broth and mix until combined.

6. Bring the soup to a gentle boil.

7. Reduce the heat, cover the pot, and simmer for 20 to 25 minutes, or until the sweet potatoes are tender.

8. Taste the soup, adjust the seasoning if needed, and serve warm.

Notes

Use yellow or white onion depending on what you have available.

Two teaspoons of minced garlic equals about two medium garlic cloves.

You can replace black beans with pinto beans, kidney beans, or navy beans.

Low sodium vegetable broth makes it easier to control the final salt level.

For a thicker soup, simmer uncovered during the final 10 minutes.

For a creamier texture, blend a small portion of the soup and stir it back into the pot.
