1 1/2 cups finely shredded carrots

Optional Topping

Instructions

1. Preheat the oven to 375°F. Butter a deep 7 x 10-inch baking dish that measures at least 2 1/2 inches deep.

2. Whisk the eggs, corn syrup, brown sugar, vanilla, cinnamon, allspice, and salt in a large bowl until smooth.

3. Stir the chopped pecans into the caramel mixture.

4. Pour the filling evenly into the prepared baking dish.

5. Whisk the flour, baking powder, sugar, cinnamon, nutmeg, ginger, cloves, and salt in a separate bowl.

6. Cut the cold butter into the dry ingredients with a pastry cutter or fork until pea-sized crumbs form.

7. Add the buttermilk, vanilla, and finely shredded carrots. Stir only until the dough comes together.

8. Spoon equal portions of the cobbler dough over the pecan filling. Leave some of the filling uncovered.

9. Bake for 30 to 40 minutes, until the topping turns golden and the filling bubbles around the edges.

10. Let the cobbler rest for 10 to 15 minutes before serving.

Notes

Finely shred or grind the carrots so they blend evenly into the topping.
