This Chicken Broccoli Rice Casserole combines tender chicken, fluffy rice, broccoli, and cheddar cheese in a creamy sauce. It makes an easy family dinner, potluck dish, or freezer-friendly meal.
Ingredients
2 cups cooked chicken, shredded or cubed
3 cups cooked white or brown rice
2 cups broccoli florets, lightly steamed
1 can, 10.5 ounces, cream of chicken soup
1/2 cup sour cream or plain Greek yogurt
1/2 cup milk
1 1/2 cups shredded cheddar cheese, divided
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt, adjusted to taste
1/4 teaspoon black pepper
1/2 cup breadcrumbs, optional
2 tablespoons melted butter, optional
Instructions
1. Preheat the oven to 375°F. Lightly grease a 9×13-inch baking dish.
2. Cook the rice according to the package directions if needed.
3. Lightly steam the broccoli until just tender. Thaw and drain frozen broccoli well.
4. Whisk the cream of chicken soup, sour cream, milk, garlic powder, onion powder, paprika, salt, and pepper in a large bowl.
5. Stir in the cooked chicken, rice, broccoli, and 1 cup of cheddar cheese.
6. Spread the mixture evenly in the prepared baking dish.
7. Sprinkle the remaining 1/2 cup of cheddar cheese over the casserole.
8. Mix the breadcrumbs with melted butter and sprinkle them over the cheese, if using.
9. Bake uncovered for 25 to 30 minutes, until the center feels hot and the cheese looks bubbly.
10. Rest the casserole for 5 minutes before serving.
Notes
Use rotisserie chicken to reduce preparation time.
Freshly shredded cheddar melts more smoothly than pre-shredded cheese.
Do not overcook the broccoli before baking.
Replace cheddar with Monterey Jack, Colby, or mozzarella.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freeze the baked or unbaked casserole for up to 3 months.
