Ingredients
1 pound smoked beef, cooked and crumbled
1 can black beans, drained and rinsed
1 cup corn kernels, fresh or frozen
1 can diced tomatoes with green chilies
1 small onion, chopped
1 cup shredded cheese
1 package cornbread mix
1 large egg
1 cup milk
1 teaspoon chili powder
Salt, to taste
Black pepper, to taste
Instructions
1. Preheat the oven to 400°F.
2. Lightly grease a 9 x 13-inch baking dish.
3. Heat a skillet over medium heat.
4. Add the chopped onion and cook until soft and translucent.
5. Add the cooked smoked beef, black beans, corn, diced tomatoes with green chilies, chili powder, salt, and black pepper.
6. Stir the filling until everything is evenly combined and heated through.
7. Spread the beef mixture evenly in the prepared baking dish.
8. Prepare the cornbread batter by mixing the cornbread mix, egg, and milk in a separate bowl.
9. Let the batter rest for a few minutes.
10. Pour the cornbread batter evenly over the beef mixture.
11. Sprinkle the shredded cheese across the top.
12. Bake for 25 to 30 minutes, until the cornbread topping is golden and cooked through.
13. Remove the casserole from the oven.
14. Let it rest for 5 to 10 minutes before slicing.
