These Cottage Cheese Egg Bites are soft, creamy, protein-rich, and perfect for breakfast meal prep. Eggs, cottage cheese, crispy bacon, and Gruyere cheese bake gently in a water bath for a tender, cafe-style texture.
Ingredients
7 large eggs
1/2 cup cottage cheese
3/4 cup cooked bacon, chopped
3/4 cup Gruyere cheese, shredded
Salt, to taste
Black pepper, to taste
Instructions
1. Preheat the oven to 325°F.
2. Add the eggs and cottage cheese to a large mixing bowl.
3. Whisk until well combined, or blend until smooth for a creamier texture.
4. Fold in the chopped bacon and shredded Gruyere cheese.
5. Season with salt and black pepper to taste.
6. Pour the mixture into a silicone muffin pan, filling each cavity about three-quarters full.
7. Place the silicone muffin pan inside a larger 9 x 13-inch baking dish.
8. Pour about 1 inch of hot water into the larger baking dish to create a water bath.
9. Bake standard-size egg bites for 20 to 24 minutes, or until the centers are set.
10. Bake mini egg bites for 25 to 30 minutes, or until fully cooked.
11. Remove the muffin pan carefully from the water bath.
12. Let the egg bites cool for several minutes before removing them from the pan.
13. Serve warm or cool completely before storing.
Notes
Blend the eggs and cottage cheese together if you prefer a completely smooth texture.
A silicone muffin pan makes the egg bites easier to remove.
The water bath helps the egg bites cook gently and stay soft and creamy.
Avoid overbaking because the egg bites can become firm and dry.
You can replace the bacon with cooked sausage, ham, spinach, mushrooms, peppers, or herbs.
Store cooled egg bites in an airtight container in the refrigerator for up to 4 days.
