Description

Creamy Pumpkin Soup combines roasted pumpkin, onion, garlic, vegetable stock, butter, cream, and warm nutmeg in a smooth, comforting soup. It works well as a cozy lunch, an easy dinner, or an elegant starter.

Ingredients

Scale

2 pounds fresh pumpkin, peeled and cut into cubes

1 tablespoon olive oil

1 medium yellow onion, diced

2 garlic cloves, minced

4 cups vegetable stock

1/2 cup heavy cream

2 tablespoons butter

1/4 teaspoon ground nutmeg

1 teaspoon salt

1/2 teaspoon black pepper

Instructions

1. Preheat the oven to 400°F or 200°C.

2. Place the pumpkin cubes on a baking sheet and toss them with olive oil and a small pinch of salt.

3. Roast the pumpkin until very tender and lightly golden around the edges.

4. Heat a large pot over medium heat.

5. Add the onion and garlic, then cook until soft and fragrant.

6. Add the roasted pumpkin to the pot.

7. Pour in the vegetable stock and bring the mixture to a gentle simmer.

8. Simmer for about 10 minutes so the flavors can combine.

9. Blend the soup with an immersion blender until completely smooth.

10. Stir in the heavy cream and butter.

11. Add the nutmeg, salt, and black pepper.

12. Warm the soup gently over low heat without letting it boil.

13. Taste and adjust the seasoning before serving.

Notes

Roast the pumpkin until very soft for deeper sweetness and a smoother texture.

Use a flavorful vegetable stock because it strongly affects the finished taste.

Blend thoroughly until no pumpkin pieces remain.

Strain the soup through a fine mesh sieve for an extra smooth finish.

Do not boil the soup after adding the heavy cream.

Replace heavy cream with coconut milk for a dairy-free variation.

Add sage, thyme, ginger, smoked paprika, or cayenne for a different flavor.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze cooled soup in freezer-safe containers for up to 3 months.

Reheat slowly over low heat and add a splash of stock if the soup becomes too thick.
