Instructions

1. Heat the olive oil and butter in a large soup pot over medium-high heat.

2. Add the chopped onion and celery, then cook for 7 to 10 minutes until softened and lightly golden.

3. Stir in the minced garlic and cook for 30 seconds.

4. Pour in the broth, then add the sweet potatoes and smoked paprika.

5. Increase the heat and bring the soup to a boil.

6. Reduce the heat, cover the pot with the lid slightly open, and simmer for 25 to 30 minutes.

7. Check that the sweet potatoes are completely tender before blending.

8. Blend the soup with an immersion blender until smooth, or carefully transfer it to a countertop blender in batches.

9. Return the soup to low heat if you used a countertop blender.

10. Stir in the sour cream and heavy cream until fully combined.

11. Season with salt and black pepper.

12. Add more broth a little at a time if the soup is thicker than desired.

13. Taste and adjust the cream, sour cream, smoked paprika, salt, or pepper before serving.

Cut the sweet potatoes into evenly sized pieces no larger than 1 inch so they cook quickly and evenly.
