2 large yellow onions, peeled, trimmed, and sliced into 1/2-inch-thick rings

1 cup buttermilk

1 large egg

1 cup all-purpose flour

1/4 cup cornstarch

1 teaspoon salt, plus extra for serving

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

2 cups panko breadcrumbs

Vegetable oil, for frying


Instructions

1. Separate the sliced onions into individual rings and set them aside.

2. Whisk the buttermilk and egg together in a shallow bowl until smooth.

3. Combine the flour, cornstarch, salt, black pepper, garlic powder, and smoked paprika in a second shallow bowl.

4. Add the panko breadcrumbs to a third shallow bowl.

5. Coat each onion ring in the seasoned flour mixture, covering every side.

6. Dip the floured ring into the buttermilk mixture and let the excess liquid drip off.

7. Press the onion ring into the panko breadcrumbs until the coating completely covers it.

8. Let the breaded onion rings rest for about 5 minutes so the coating can adhere.

9. Heat 2 inches of vegetable oil in a heavy skillet or pot to 350°F.

10. Fry the onion rings in small batches for 2 to 3 minutes, turning once, until golden and crisp.

11. Transfer the fried onion rings to a paper towel-lined plate and season with extra salt while hot.

12. Serve immediately with ketchup, ranch, barbecue sauce, garlic aioli, spicy mayonnaise, or another preferred dip.
