1 large onion, thinly sliced

2 cloves garlic, minced

2 tablespoons all purpose flour

1 cup chicken broth

1 tablespoon Worcestershire sauce

1/2 cup sour cream, optional

Fresh thyme, rosemary, or sage, optional

Sliced mushrooms, optional

Heavy cream, optional

Cayenne pepper, optional


Instructions

1. Season the pork chops evenly with salt, black pepper, smoked paprika, and dried thyme.

2. Heat the vegetable oil in a large skillet over medium high heat.

3. Sear the pork chops for 3 to 4 minutes on each side until golden brown.

4. Transfer the browned pork chops to the slow cooker.

5. Add the sliced onions to the same skillet and cook for about 3 minutes until softened.

6. Stir in the minced garlic and cook for 1 minute.

7. Sprinkle the flour over the onions and stir continuously for 1 minute.

8. Slowly whisk in the chicken broth and Worcestershire sauce until the gravy is smooth.

9. Pour the onion gravy over the pork chops in the slow cooker.

10. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.

11. Stir in the sour cream before serving if desired.

12. Spoon the gravy over the pork chops and serve hot.

Notes

Use thick bone in pork chops for the best tender and juicy texture.

Do not skip the browning step because it adds deeper flavor to the finished dish.

For make ahead preparation, brown the pork chops and prepare the gravy the night before, then refrigerate them separately.

Add sliced mushrooms, fresh herbs, heavy cream, or a pinch of cayenne pepper for variation.
