Description

1 1/2 teaspoons pumpkin pie spice

1 teaspoon kosher salt

1/2 cup chocolate chips, optional

Instructions

1. Preheat the waffle iron to medium heat. Set the oven to 175°F if you need to keep finished waffles warm.

2. Whisk the pumpkin puree, milk, sugar, eggs, melted butter, and vanilla extract in a large bowl until smooth.

3. Add the flour, baking powder, cinnamon, pumpkin pie spice, and salt. Stir gently until the batter just comes together.

4. Fold in the chocolate chips, if using. Do not overmix the batter.

5. Pour about 1/2 cup of batter into the heated waffle iron.

6. Cook for about 2 minutes, or until the waffle turns golden and the waffle iron signals that it is ready.

7. Place cooked waffles in the warm oven in a single layer while you finish the remaining batter.

Notes

For crisp waffles, cook each one until deeply golden and avoid stacking them while warm.

For lighter and softer waffles, separate the eggs, beat the whites until stiff, and fold them into the batter last.

Add another 1/2 teaspoon pumpkin pie spice for a stronger autumn flavor.

Store leftovers in an airtight container in the refrigerator for 2 to 3 days.

Freeze cooled waffles in a freezer-safe bag for up to 3 months.

Reheat in a toaster or toaster oven for the crispest texture. You can also warm them in a 250°F oven for 5 to 10 minutes.
