Ingredients

Juice of 1/2 lemon

Cold water, enough to fill a medium bowl halfway

3 medium crisp apples

2/3 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup sparkling apple cider or lemon-lime soda

1 large egg, beaten

1/2 cup granulated sugar

1 teaspoon ground cinnamon

Oil, for frying


Instructions

1. Fill a medium bowl halfway with cold water and add the lemon juice.

2. Slice the apples horizontally into rounds about 1/4 to 3/8 inch thick.

3. Remove the core from each apple slice with a small round cutter or paring knife.

4. Place the apple rings immediately into the lemon water to help prevent browning.

5. In a separate bowl, whisk together the flour, baking powder, and salt.

6. Add the beaten egg and sparkling apple cider or lemon-lime soda.

7. Stir just until combined. A few small lumps are fine.

8. In another small bowl, mix the granulated sugar and cinnamon.

9. Pour 1 1/2 to 2 inches of oil into a large heavy pot.

10. Heat the oil to 350°F.

11. Line a tray or baking sheet with paper towels.

12. Remove several apple rings from the lemon water and pat them completely dry.

13. Dip each apple ring into the batter and let excess batter drip back into the bowl.

14. Carefully lower the battered apple rings into the hot oil in a single layer.

15. Fry for about 1 1/2 minutes per side, or until golden brown.

16. Transfer the cooked apple rings to the paper towel-lined tray to drain briefly.

17. While the rings are still warm, coat them generously with the cinnamon sugar mixture.

18. Serve warm.

Notes

Choose firm apples such as Honeycrisp, Granny Smith, Fuji, or Pink Lady for the best texture.

Do not overcrowd the frying pot because the oil temperature can drop and make the apple rings greasy.

Keep the oil temperature close to 350°F for even frying.

Dry the apple slices thoroughly before dipping them into the batter.

Prepare all ingredients before heating the oil and never leave hot oil unattended.

These apple rings are best served immediately while crisp.
