Description
Tender chicken breasts and golden baby potatoes roast together with garlic, Parmesan, herbs, and butter for an easy one-pan family dinner.
Ingredients
1 1/2 pounds boneless skinless chicken breasts, about 3 to 4 pieces
1 1/2 pounds baby potatoes, halved or quartered if large
3 tablespoons olive oil, divided
4 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon paprika
1/2 teaspoon salt, plus more to taste
1/2 teaspoon black pepper
1/2 cup grated Parmesan cheese, divided
2 tablespoons unsalted butter, melted
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the oven to 400°F. Lightly grease a large baking dish or sheet pan.
2. Toss the potatoes with 2 tablespoons olive oil, half of the garlic, Italian seasoning, paprika, salt, and black pepper.
3. Spread the seasoned potatoes evenly over one side of the prepared pan.
4. Coat the chicken breasts with the remaining tablespoon of olive oil.
5. Rub the chicken with the remaining garlic, a little salt, black pepper, and half of the Parmesan cheese.
6. Place the chicken on the open side of the pan in a single layer.
7. Bake for 30 to 35 minutes, turning the potatoes halfway through cooking.
8. Check the chicken with a meat thermometer. It should reach 165°F in the thickest part.
9. Brush the cooked chicken and potatoes with melted butter.
10. Sprinkle with the remaining Parmesan cheese, garnish with parsley, and serve hot.
Notes
Cut the potatoes into similar-sized pieces so they cook evenly.
Pat the chicken dry before seasoning to help the coating stick.
Use freshly grated Parmesan for the best flavor and texture.
Boneless skinless chicken thighs can replace the chicken breasts.
Broccoli, asparagus, carrots, green beans, or Brussels sprouts can be added according to their cooking times.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freeze cooled portions for up to 2 months.
Reheat in a 350°F oven for 10 to 15 minutes for the best texture.
