2 tablespoons olive oil

1/4 cup soy sauce

2 tablespoons mirin

1/2 cup honey, maple syrup, or agave

3/4 cup water

1 tablespoon sesame oil

4 garlic cloves, minced

1 tablespoon fresh ginger, minced

1/4 teaspoon red pepper flakes, optional

1 tablespoon cornstarch

Instructions

1. Preheat the oven to 425°F.

2. Line a baking sheet with foil, then place parchment paper on top.

3. Pat the chicken wings completely dry with paper towels.

4. Combine the salt, black pepper, smoked paprika, and garlic powder in a large bowl.

5. Add the wings and toss until evenly coated.

6. Brush or drizzle the wings with olive oil.

7. Arrange the wings in a single layer on the prepared baking sheet.

8. Use two baking sheets if needed to avoid overcrowding.

9. Bake for 35 minutes, turning the wings after 20 minutes.

10. While the wings bake, combine the soy sauce, mirin, honey, water, sesame oil, garlic, ginger, red pepper flakes, and cornstarch in a small saucepan.

11. Bring the sauce to a boil over medium heat.

12. Reduce the heat and simmer for about 10 minutes, stirring often, until the sauce thickens slightly and coats the back of a spoon.

13. Remove the wings from the oven and toss them with the honey garlic sauce.

14. Return the coated wings to the baking sheet.

15. Bake for another 10 minutes, turning after 5 minutes and brushing with additional sauce.

16. Broil for 1 to 3 minutes for extra caramelization, watching closely.

17. Let the wings cool for 10 minutes so the glaze can thicken.

18. Brush with more sauce if desired.

19. Garnish with sesame seeds and serve with your favorite dipping sauce.
