Description

Lemon Blueberry Cottage Cheese Protein Bites are creamy, tangy, and protein-rich. A no-bake snack that’s refreshing and easy to prepare in minutes.


Ingredients

Scale

1 cup cottage cheese (full-fat or low-fat)

1/2 cup rolled oats

1/4 cup vanilla or unflavored protein powder

1 tbsp honey or maple syrup

1 tsp lemon zest

1 tsp lemon juice

1/3 cup blueberries (fresh or thawed)

1/4 tsp vanilla extract

Pinch of salt

23 tbsp almond or coconut flour (as needed)


Instructions

1. Add cottage cheese, oats, protein powder, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and salt to a food processor. Blend until smooth and thick.

2. Transfer mixture to a bowl. Add almond or coconut flour one tablespoon at a time until dough is firm enough to roll.

3. Gently fold in blueberries, avoiding overmixing.

4. Scoop mixture with a spoon and roll into 12–15 balls.

5. Place on a tray and chill in the refrigerator for 30 minutes.

Notes

Use full-fat cottage cheese for a smoother texture.

Increase lemon zest for stronger citrus flavor.

Roll bites in coconut or crushed nuts for variation.

Keep in fridge for 5 days or freeze for up to 2 months.
