Ingredients
Cookies:
1 cup unsalted butter, softened
2 cups granulated sugar
3 large eggs
1 cup buttermilk
1/2 teaspoon salt
1 teaspoon vanilla extract
2 teaspoons maple extract
1 teaspoon baking soda
1 teaspoon baking powder
4 1/2 cups all-purpose flour
Maple Icing:
1/2 cup unsalted butter
1 cup brown sugar
1/4 cup milk
2 tablespoons pure maple syrup
1 pinch salt
2 cups powdered sugar
Instructions
1. Preheat the oven to 350°F and line baking sheets with parchment paper.
2. Beat the softened butter and granulated sugar in a large mixing bowl until light and creamy.
3. Add the eggs one at a time, mixing well after each addition.
4. With the mixer running on low speed, slowly pour in the buttermilk and mix until combined.
5. Add the salt, vanilla extract, maple extract, baking soda, and baking powder.
6. Mix in half of the flour until incorporated.
7. Add the remaining flour and mix just until a soft dough forms.
8. Drop 2-tablespoon portions of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
9. Bake for 6 to 8 minutes. Keep the cookies pale and remove them once the centers appear set.
10. Cool the cookies on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
11. To make the icing, melt the butter and brown sugar in a saucepan over medium heat.
12. Bring the mixture to a boil and whisk constantly for 2 minutes.
13. Add the milk, maple syrup, and salt.
14. Return the mixture to a boil and whisk for 1 minute.
15. Remove the saucepan from the heat and let the mixture cool for 15 minutes.
16. Whisk in the powdered sugar until the icing becomes thick, smooth, and spreadable.
17. Add milk 1 tablespoon at a time if the icing becomes too thick.
18. Quickly spread the icing over the completely cooled cookies.
19. Allow the icing to set before stacking, storing, or serving the cookies.
Notes
Do not overbake the cookies. Remove them while they are still pale to preserve their soft texture.
Use a cookie scoop so the cookies bake evenly.
Cool the cookies completely before adding the icing.
Whisk the icing constantly while it cooks to prevent scorching.
