These Maple Dijon Roasted Sweet Potatoes are roasted until tender with crispy, caramelized edges. A quick maple-Dijon glaze adds the perfect balance of sweet and tangy, making them an easy and flavorful side dish for any meal.
Ingredients
2 large sweet potatoes, peeled and diced
2 tablespoons Dijon mustard
2 tablespoons white balsamic vinegar
1 tablespoon olive oil
1 tablespoon maple syrup
1 teaspoon kosher salt
Fresh cracked black pepper, to taste
Instructions
1. Preheat oven to 425°F and line a baking sheet with parchment paper.
2. In a small bowl, whisk together the Dijon mustard, maple syrup, vinegar, and olive oil.
3. Add diced sweet potatoes to a bowl and pour the glaze over them.
4. Toss until every piece is evenly coated.
5. Spread the potatoes in a single layer on the baking sheet.
6. Sprinkle with kosher salt and black pepper.
7. Roast for 30 to 45 minutes, stirring once or twice until golden and tender.
8. Serve hot as a side dish.
Notes
You can substitute honey for maple syrup—use slightly less, as it’s sweeter and thicker.
Leave skins on for a rustic texture and added fiber.
Swap white balsamic with apple cider vinegar if needed.
Glaze can be made up to 24 hours ahead and refrigerated.
