Description

These Maple Roasted Carrots are tender, buttery, and beautifully caramelized with maple syrup, brown sugar, and a touch of cinnamon. They make an easy holiday side dish or a flavorful vegetable for everyday family dinners.


Ingredients

4 tablespoons unsalted butter, melted and slightly cooled

1/3 cup pure maple syrup

2 tablespoons brown sugar or coconut sugar

1/4 teaspoon ground cinnamon, optional

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

2 pounds carrots, rainbow, baby, or regular


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. Melt the butter and allow it to cool slightly.

3. Whisk together the melted butter, maple syrup, brown sugar, cinnamon, kosher salt, and black pepper until smooth.

4. Wash and peel the carrots if desired.

5. Cut larger carrots into evenly sized 2-inch pieces and slice thick pieces lengthwise if needed.

6. Place the carrots on the prepared baking sheet.

7. Pour the maple glaze over the carrots and toss until every piece is evenly coated.

8. Arrange the carrots in a single layer with space between each piece.

9. Roast for 25 to 30 minutes, tossing halfway through the cooking time.

10. Check for doneness by inserting a small knife into one of the thickest carrots. It should slide in easily.

11. Remove from the oven and allow the carrots to cool for 5 to 10 minutes before serving.

Notes

Cut the carrots into similar sizes so they cook evenly.

Use melted butter because it coats the carrots more evenly than softened butter.

Do not overcrowd the baking sheet because crowded carrots will steam instead of caramelize.

Roast at 400°F to encourage browning and caramelized edges.

Toss the carrots halfway through roasting for even color and cooking.

Start checking for doneness around the 25-minute mark because cooking time can vary with carrot size.

To make ahead, roast the carrots, cool completely, and refrigerate in a covered oven-safe dish for 1 to 2 days.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheat covered in a 350°F oven for 15 to 20 minutes or microwave individual portions in 30-second intervals.
