Description

This Mexican Corn Casserole is a creamy, comforting side dish inspired by Mexican street corn. Sweet corn, jalapeños, cotija cheese, butter, and elote seasoning bake into a rich casserole with a soft center and golden top.


Ingredients

2 cans cream-style corn

1 can whole sweet corn, drained

5 large eggs

1/4 cup cornstarch

1/4 cup granulated sugar

1/3 cup butter, melted

2 jalapeños, finely chopped

1/4 cup cotija cheese, crumbled

1 tablespoon elote seasoning blend

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Fresh or pickled jalapeño slices, optional

Sour cream, optional

Chili powder, for garnish

Extra cotija cheese, for topping


Instructions

1. Preheat the oven to 400°F and grease a 9 x 13-inch baking dish.

2. Whisk the eggs in a large mixing bowl until smooth.

3. Slowly pour in the melted butter while continuing to whisk.

4. Add the sugar and cornstarch, then mix until smooth and fully combined.

5. Stir in the cream-style corn, drained whole corn, chopped jalapeños, cotija cheese, and elote seasoning.

6. Pour the corn mixture into the prepared baking dish and spread it evenly.

7. Bake for about 1 hour, or until the center is set and the top is golden brown.

8. Let the casserole rest for 5 to 10 minutes.

9. Top with cilantro, lime wedges, jalapeño slices, chili powder, sour cream, and additional cotija cheese before serving.

Notes

For a milder casserole, remove the jalapeño seeds or reduce the amount of jalapeño.

If cotija cheese is unavailable, use queso fresco, feta, or finely grated Parmesan.

Let the casserole rest for several minutes after baking so the texture can firm slightly.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze the casserole for up to 2 months in a freezer-safe container.

Thaw frozen casserole overnight in the refrigerator before reheating.
