Description
These Mini Banana Chocolate Chip Muffins are soft, moist, and easy to make with ripe bananas, melted butter, and mini chocolate chips. They are perfect for breakfast, lunchboxes, snacks, or make-ahead meal prep.
Ingredients
1/2 cup unsalted butter, melted
1/2 cup granulated or golden sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
2 overripe bananas, mashed, about 3/4 cup
1/2 cup mini chocolate chips
Extra mini chocolate chips, optional, for topping
Instructions
1. Preheat the oven to 350°F.
2. Generously grease a 24-cup mini muffin pan with nonstick cooking spray.
3. Add the melted butter to a large mixing bowl and let it cool slightly.
4. Whisk in the sugar until combined.
5. Add the egg and vanilla extract and whisk until smooth.
6. Stir in the all-purpose flour and baking soda.
7. Fold in the mashed bananas until just combined.
8. Gently stir in the mini chocolate chips.
9. Divide the batter evenly among the prepared mini muffin cups, filling each one almost full.
10. Sprinkle extra mini chocolate chips over the tops if desired.
11. Bake for 12 to 15 minutes, or until lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
12. Let the muffins cool in the pan for 5 minutes.
13. Transfer the muffins to a wire rack and allow them to cool completely.
Notes
Use very ripe bananas with plenty of brown spots for the best sweetness and moisture.
Do not overmix the batter because this can make the muffins dense.
Mini muffins bake quickly, so begin checking them around 12 minutes.
Store cooled muffins in an airtight container at room temperature for up to 3 days.
Refrigerate for up to 1 week if you want longer storage.
Freeze cooled muffins in a freezer-safe bag or airtight container for up to 3 months.
Thaw frozen muffins at room temperature or warm briefly in the microwave before serving.
