These Oven Baked Chicken Thighs feature crisp, golden skin and tender, juicy meat seasoned with garlic, onion, paprika, herbs, and olive oil. This easy family dinner is naturally low in carbohydrates and ready in about 45 minutes.
Ingredients
2 tablespoons olive oil
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground paprika
1 teaspoon Italian seasoning
1 teaspoon dried parsley
2 teaspoons salt
1/2 teaspoon black pepper
2 pounds chicken thighs, about 6 to 8 pieces, patted dry
1 tablespoon butter, diced, optional
Instructions
1. Preheat the oven to 400°F. Line a rimmed baking sheet or baking pan with foil and place it in the oven while it heats.
2. Combine the olive oil, garlic powder, onion powder, paprika, Italian seasoning, dried parsley, salt, and black pepper in a large bowl.
3. Stir the ingredients until they form a thick seasoning paste.
4. Add the chicken thighs to the bowl and coat each piece thoroughly.
5. Rub the seasoning mixture over the skin and sides of every chicken thigh.
6. Carefully remove the hot pan from the oven and arrange the chicken thighs skin side up.
7. Scatter the diced butter over the chicken if using.
8. Bake the chicken for 20 minutes.
9. Remove the pan and spoon the juices over the chicken.
10. Return the pan to the oven and bake for another 10 minutes.
11. Baste the chicken again with the pan juices.
12. Continue baking for 5 to 15 minutes, or until the thickest part of each thigh reaches 165°F.
13. Let the chicken rest for 5 minutes before serving.

Pat the chicken thighs completely dry before seasoning to help the skin become crisp.
Rub the seasoning paste firmly over each piece so it stays on during baking.
Use a rimmed baking sheet or baking dish because the chicken releases juices while it cooks.
