Description
These Parmesan garlic roasted potatoes are crispy on the outside and tender inside, tossed in a savory blend of garlic, herbs, and cheese. Perfect as a side dish for any meal, they’re simple to make and always a crowd-pleaser.
Ingredients
2 pounds red potatoes, cut into 1-inch pieces
2 tablespoons olive oil
½ cup grated Parmesan cheese
3 garlic cloves, minced
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon black pepper
Fresh chopped parsley for garnish
Instructions
1. Preheat oven to 400°F and lightly grease a baking sheet or line with parchment paper.
2. In a large bowl, mix olive oil, Parmesan cheese, garlic, and oregano.
3. Add the chopped potatoes and toss to coat evenly.
4. Spread potatoes in a single layer on the baking sheet.
5. Sprinkle with salt, pepper, and a bit of extra Parmesan if desired.
6. Roast for 30 to 35 minutes, flipping once halfway, until golden and crisp.
7. Garnish with parsley and serve hot.
Notes
Yukon gold or baby potatoes can be used instead of red potatoes.
Grated Parmesan gives a better crust, but shredded adds texture.
Add fresh rosemary or thyme for a herby variation.
Leftovers can be used in breakfast hash or salads.
