Ingredients
1 pound ground beef
1 cup chopped roasted green chiles
1 medium onion, diced
2 cloves garlic, minced
1 cup canned diced tomatoes
8 ounces cream cheese, softened
1/2 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
3 large eggs, beaten
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
Instructions
1. Preheat the oven to 350°F. Grease a 9 x 13-inch baking dish with olive oil or butter.
2. Heat a large skillet over medium heat. Add the ground beef and cook until fully browned. Drain the excess grease.
3. Add the diced onion, minced garlic, and roasted green chiles. Cook for about 5 minutes, stirring occasionally, until the vegetables soften.
4. Stir in the diced tomatoes and cook for another 3 minutes.
5. Combine the softened cream cheese, sour cream, beaten eggs, salt, and black pepper in a large bowl. Mix until smooth.
6. Add the cooked beef mixture to the cream cheese mixture. Stir until everything is evenly combined.
7. Transfer the mixture to the prepared baking dish and spread it into an even layer.
8. Sprinkle the cheddar cheese and Monterey Jack cheese evenly over the top.
9. Bake for 30 to 35 minutes, until the cheese melts, bubbles, and turns lightly golden.
10. Remove the casserole from the oven and let it rest for 5 minutes before slicing and serving.
Notes
Soften the cream cheese before mixing to help prevent lumps.
Roasted poblano peppers, Anaheim peppers, or canned green chiles all work well.
Use freshly shredded cheese for a smoother melt.
Taste the cooked beef mixture before assembling and adjust the seasoning as needed.
Let the casserole rest before cutting so the portions hold their shape.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
