Description
These Pork Medallions feature tender slices of pork tenderloin coated in a rich onion gravy. The recipe comes together in 30 minutes and works well for family dinners, weeknight meals, or entertaining.
Ingredients
1 pound pork tenderloin, sliced into 1-inch medallions
Salt, to taste
Black pepper, to taste
2 tablespoons olive oil
2 tablespoons butter
1 large onion, thinly sliced
2 cloves garlic, minced
1 tablespoon all-purpose flour
1 cup beef broth
1 teaspoon Worcestershire sauce
1/2 teaspoon dried thyme
Additional salt and pepper, to taste
Instructions
1. Slice the pork tenderloin into 1-inch medallions.
2. Season both sides of each medallion with salt and black pepper.
3. Heat the olive oil in a large skillet over medium-high heat.
4. Add the pork medallions and cook for 3 to 4 minutes per side until browned.
5. Transfer the pork to a plate and cover loosely with foil.
6. Melt the butter in the same skillet over medium heat.
7. Add the sliced onion and cook for 8 to 10 minutes until soft and golden.
8. Stir in the minced garlic and cook for about 20 seconds.
9. Sprinkle the flour over the onions and stir for 1 to 2 minutes.
10. Slowly pour in the beef broth while stirring continuously.
11. Add the Worcestershire sauce and dried thyme.
12. Season the gravy with salt and black pepper to taste.
13. Simmer for 1 to 2 minutes until the gravy thickens.
14. Return the pork medallions to the skillet and coat them with the onion gravy.
15. Cook for another 2 to 3 minutes, or until the pork reaches 145°F internally.
16. Serve the Pork Medallions warm with the onion gravy spooned over the top.
Notes
Use pork tenderloin rather than pork loin because tenderloin cooks quickly and stays tender.
Cut the medallions to an even thickness so they cook at the same rate.
Avoid overcrowding the skillet, or the pork may steam instead of brown.
Use an instant-read thermometer and remove the pork once it reaches 145°F.
Add a small splash of beef broth if the gravy becomes too thick.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Freeze cooled portions for up to 3 months.
Reheat gently in a covered skillet over low heat, adding broth as needed.
