Description

Ingredients
2 to 3 cups strained pot roast drippings
2 1/2 tablespoons cornstarch
Salt, to taste
Freshly ground black pepper, to taste
Optional: 2 to 3 cups beef broth or beef stock if roast drippings are unavailable
Instructions
1. Pour the pot roast drippings through a fine mesh strainer into a skillet or saucepan.
2. Measure 2 to 3 cups of the strained liquid.
3. Transfer 3 tablespoons of the liquid to a small bowl.
4. Whisk the cornstarch into the reserved liquid until the mixture looks completely smooth.
5. Bring the remaining liquid to a gentle simmer over medium heat.
6. Slowly whisk the cornstarch mixture into the simmering broth.
7. Continue cooking and stirring until the gravy reaches your preferred thickness.
8. Taste the gravy, then season it with salt and black pepper.
9. Serve the gravy warm over pot roast, mashed potatoes, rice, or vegetables.
Notes
Use beef broth or beef stock when you do not have enough roast drippings.
Always mix cornstarch with cool liquid before adding it to the hot broth to prevent lumps.
Let the gravy simmer before adding more thickener because it will continue to thicken as it cooks.
For thicker gravy, mix 2 to 3 teaspoons of cornstarch with an equal amount of cold water, then whisk the slurry into the simmering gravy.
For thinner gravy, gradually add warm beef broth until the consistency becomes smooth and pourable.
Store leftover gravy in an airtight container in the refrigerator for up to 5 days.
Freeze the gravy for up to 3 months.
Reheat slowly on the stovetop and add a small amount of beef broth if needed.
