Description
Roasted Acorn Squash is an easy seasonal side dish with naturally sweet flavor, tender flesh, and lightly caramelized edges. Butter, olive oil, Italian seasoning, garlic, and onion powder add savory depth, while Parmesan and parsley make a simple optional finish.
Ingredients
2 tablespoons unsalted butter, melted
2 tablespoons extra virgin olive oil
1 teaspoon Italian seasoning
1 teaspoon fine sea salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 large acorn squash, or 2 small to medium acorn squash
Freshly grated Parmesan cheese, optional
Fresh parsley, chopped, optional
Instructions
1. Preheat the oven to 400°F and line a large baking sheet with parchment paper or a silicone baking mat.
2. Whisk together the melted butter, olive oil, Italian seasoning, salt, black pepper, garlic powder, and onion powder.
3. Cut the acorn squash in half lengthwise and scoop out the seeds and stringy center.
4. Slice the squash into wedges about 1 inch thick.
5. Arrange the squash wedges in a single layer on the prepared baking sheet.
6. Brush the wedges generously with the seasoned butter mixture.
7. Roast for 15 to 20 minutes, or until the squash is fork tender and lightly caramelized around the edges.
8. Top with grated Parmesan cheese and chopped parsley before serving if desired.
Notes
Cut the squash wedges into similar sizes so they cook evenly.
Leave space between the wedges to help the edges caramelize.
There is no need to peel acorn squash before roasting.
For a sweeter variation, add cinnamon and a light drizzle of maple syrup.
For extra savory flavor, add fresh rosemary, thyme, or smoked paprika.
Store leftovers in an airtight container in the refrigerator for 4 to 5 days.
For freezing, remove the skin and freeze the cooked squash in cubes or puree it before storing.
Frozen cooked squash can be stored for up to 1 year.
Reheat in the oven or air fryer for the best texture.
