Description

Slow Cooker Chicken Noodle Soup combines tender shredded chicken, fresh vegetables, egg noodles, herbs, and savory broth in one comforting meal. The slow cooker handles most of the work, making this recipe ideal for busy weekdays, meal prep, and cozy family dinners.


Ingredients

1 to 1 1/2 pounds boneless, skinless chicken breasts, trimmed

1 medium to large yellow onion, diced

3 large carrots, peeled and sliced

2 celery stalks, sliced

3 to 4 garlic cloves, minced

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

1 bay leaf, optional

2 teaspoons chicken bouillon base

8 to 9 cups reduced sodium chicken broth

8 ounces wide egg noodles

Fresh parsley, chopped, for garnish

Additional salt and pepper, to taste


Instructions

1. Place the chicken breasts in the bottom of a 6 quart or larger slow cooker.

2. Add the onion, carrots, celery, garlic, thyme, rosemary, kosher salt, black pepper, and bay leaf.

3. Spoon the chicken bouillon base over the ingredients.

4. Pour in the reduced sodium chicken broth and stir gently.

5. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.

6. Transfer the cooked chicken to a bowl and shred it with two forks.

7. Remove and discard the bay leaf.

8. Return the shredded chicken to the slow cooker.

9. Stir in the egg noodles.

10. Cover and cook on LOW for 10 to 15 minutes, or until the noodles are tender.

11. Taste the soup and add more salt or pepper as needed.

12. Garnish with chopped fresh parsley and serve hot.

Notes

For firmer noodles, cook the egg noodles separately and add them to each bowl before serving.

Use boneless chicken thighs instead of chicken breasts for a richer flavor.

Freeze the soup without the noodles whenever possible because cooked pasta can soften after thawing.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze cooled soup in freezer safe containers for up to 3 months.
