Description

These Smoked Chicken Wings are juicy, tender, and packed with smoky barbecue flavor. A dry rub mixed with baking powder helps the skin crisp beautifully, while a two-temperature smoking method keeps the meat moist and flavorful.

Ingredients

Scale

3 pounds chicken party wings

3 tablespoons dry rub seasoning

2 tablespoons baking powder

Favorite barbecue sauce, optional, for tossing

Instructions

1. Preheat the smoker to 250°F.

2. Pat the chicken wings completely dry with paper towels.

3. Combine the dry rub seasoning and baking powder in a small bowl.

4. Season the wings evenly on all sides with the dry rub mixture.

5. Arrange the wings directly on the smoker grates, leaving space between each piece.

6. Smoke the wings for 45 minutes, flipping them about halfway through.

7. Increase the smoker temperature to 400°F or use the high setting.

8. Flip the wings again and continue cooking until the internal temperature reaches 175°F.

9. Remove the wings from the smoker and toss with barbecue sauce if desired.

10. For extra crispy skin, air fry the wings at 350°F for about 5 minutes or broil them briefly in the oven.

11. Serve immediately with your favorite dipping sauces.

Notes

Patting the wings dry before seasoning helps the skin become crisp.

Baking powder improves browning and creates a better exterior texture.

Use a meat thermometer to check doneness.

Cooking the wings to 175°F produces tender meat that pulls away from the bone easily.

For extra heat, add cayenne pepper to the dry rub.

Apple, cherry, pecan, and hickory wood all work well for smoking chicken wings.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze cooled wings in a freezer-safe container for up to 3 months.

Thaw frozen wings overnight in the refrigerator before reheating.

Reheat in an air fryer, oven, or smoker for the best crispy texture.
