Description
Traditional Southern Potato Salad with creamy mayonnaise, tender potatoes, eggs, mustard, and sweet relish.
Ingredients
4 medium potatoes
4 large eggs
1/2 cup mayonnaise
1/2 stalk celery, chopped
1/4 cup sweet relish
1 clove garlic, minced
2 tablespoons prepared mustard
Salt and black pepper to taste
Instructions
1. Wash and boil potatoes until tender but firm.
2. Drain and cut potatoes into chunks.
3. Boil eggs, peel them, and chop finely.
4. Combine potatoes, eggs, mayonnaise, celery, relish, garlic, and mustard in a large bowl.
5. Season with salt and pepper.
6. Mix gently and serve warm or chilled.
Notes
Use Yukon Gold potatoes for best texture.
Sprinkle paprika over the top before serving.
Refrigerate leftovers for up to 4 days.
